Carrot Cupcakes

It’s been a long few months. I’ve been adjusting to my new job and a new lifestyle, as well as working hard to get fit again and lose some weight (successful on all accounts to far…), and by my side through it all has been my very fantastic husband. He’s been there by my side, patient as ever, while I get used to all of these big changes, so I decided a thank you cake was in order. His favourite cake, carrot cake, really never makes much of an appearance in our house, because I’m just not really a fan. I don’t like the spices so much in it, so I don’t really make Sous-Jeff’s favourite cake; I generally go for the mutual favourites, like chocolate cakes, cookies, and what not. But I decided it was about time I got into the kitchen and created one of Sous-Jeff’s favourites to say thank you :) I very loosely based my mini carrot cakes on this recipe for carrot and sunflower seed muffins from Taste.com, but I did change a lot to make it a cake I knew Sous-Jeff would love.

My version of these little cakes requires…

  • 3 eggs
  • 120g tub of apple puree
  • 125ml buttermilk
  • 70g brown sugar
  • 1 tbsp peanut oil
  • 150g finely grated carrot
  • 1/4 cup sunflower seeds
  • 1 cup toasted, chopped walnuts
  • 1 tbsp finely grated lemon rind
  • 1 tbsp finely grated orange rind
  • 3/4 cup sultanas
  • 1/4 cup finely chopped dried apples
  • 265g plain flour
  • 2 tsp baking powder
  • 1 tsp mixed spice

First up, preheat the oven to 180°C, and line two 12-hole muffin trays with cupcake cases. Then prepare all of your other ingredients – toast the walnuts, grate the carrots and lemon and orange rind.

In a large bowl, place the eggs, sugar, apple puree, oil and milk. Whisk together until it looks something like this:

Sift the flour, baking powder and all spice into the mixture, and stir well to combine.

Then, throw in everything else into the bowl…

… stir it all in…

… spoon it all into your cupcake cases, into the oven, and bake for 15 – 18 minutes!

That easy! Once they come out of the oven, let them sit for 10 minutes or so before removing them from the trays.

Out they came, all big, fat, juicy and smelling amazing…

… and beautiful, soft, fluffy cupcakes on the inside, with lots and lots of yummy fillings! Perfect!

And, you’ll note, no icing on top – Sous-Jeff hates a frosted cupcake (yes, I know, he’s insane.. but it works out well, because I absolutely loooove the frosting!). So, made exactly to his specifications, he was greeted by a big fat tray of these when he arrived home from a few days away on a work trip – and he loved them :) Success! He decided that the best way to eat them was cut in half, microwaved, and smothered with butter. I actually tried one and decided it wasn’t too bad either! The spice was still wayyyy too strong for my liking, but other than that, not bad!

Melbourne Foodie Day Part 1: Pie Face, Little Cupcakes and pre-loved books

It was another relaxing, but uneventful Thursday night in our household, Sous-Jeff, Kitchen Bug and I curled up on the couch watching Master Chef, and drooling over the guest chef’s creation on our TV screen. “Maybe we should have a foodie weekend, just around Melbourne…” I say out loud, more to myself than the other two. But Sous-Jeff nods at this suggestion, and that’s all the encouragement I need. Within 5 minutes, I have a path to follow on Saturday morning, that will lead us from Flinder St station to Movida Next Door, HuTong Dumpling Bar, and finally, La Belle Miette. I show Sous-Jeff and explain what each place is all about, he nods along patiently and waits for me to finish. He has only two questions: “Can we go to a pub somewhere in between?” Sure thing. “Can we please try Pie Face?” Yeahh, sure, why not?! Around rolls Saturday morning, and after a biiiig workout and a tiny breakfast, onto the train we go!

We hop off at Flinders St station, and come almost immediately face to face with Pie Face, a franchise pie bakery that seems to be sprouting new stores all over the Melbourne CBD. The Pie Face bakeries and cafes were founded by the founders of fashion label Paablo Nevada, who fell into the pie business after serving little pies at a fashion show of theirs. We’ve been noticing stores popping up all over the place, resulting in Sous-Jeff calling me “pie face.” I must resemble one of the pie faces or something… I dunno. Anyway, he felt it was high time we finally tried out one of these pies, and I agreed. “But only a small one, we’re going to Movida first and I want to be hungry and ready to eat!”

“24 hour pies?! Are you joking?!” Sous-Jeff is immediately impressed. In we walk to find a line of young people already desperately ordering coffees (it was only 11am…) in strengths ranging from “Tingle My Toes” (a gradual rise for morning avoiders), to “Open My Eyes” (your standard coffee), to the more extreme “Start My Heart” and “Kick My Arse” blends, to really jolt you awake. Being non-coffee drinkers, however, our eyes went straight to the pies…

There were adorable little pie faces everywhere! Luckily for us, there were only two types of mini pies left, so we didn’t have to make the tough decision of which cute little face to say yes to. Sous-Jeff was famished by this point and couldn’t wait much longer for Movida, so he got 2 little pies, and I got the third and last one in the window.

Sous-Jeff’s Special Thai Chicken Curry pies were by all accounts delicious. Boasting fresh chicken and a spicy Thai green curry flavour, Sous-Jeff was excited to jump right on in. While it wasn’t all that spicy, the chicken was certainly fresh and very tasty.

My pie face was of the Mince Beef and Tomato Chutney variety, filled with premium Australian lean beef, and tomato chutney. The pastry was perfect – golden and crunchy, and the filling was flawless. Starting to see why these franchises are so popular! Very yummy!

Would rate it 8 out of 10.

“Hey, honey…. since we’re already on Degraves St…. and Movida doesn’t open for another 30 minutes…. do you think we could maybe….”

The sign of a good marriage – I don’t need to finish this sentence. Sous-Jeff pulls out his wallet and says, “just grab me a carrot one.” With those words, I start running down Degraves St to Little Cupcakes. I know that with tapas, dumplings and macarons to come, I really don’t need cupcakes as another appetiser, but I justify the visit with the following: they are the best cupcakes in Melbourne, and I’m not in the city all that often, so when I am here, I owe it to myself to get a little cupcake. And besides, they’re only little.

I’ve said it before, and I’ll say it again – if you have not been here, please go. Immediately, if not sooner. The cupcakes truly are that good. And even more exciting, they have my favourite flavour this morning – Lamington! It’s a vanilla cake topped with a chocolate ganache like frosting, coated in coconut. Mmmm chocolate and coconut… my favourite :) I also grab myself a Teddy Bear cake (yes, I am secretely still a 5 year old child deep inside, and I love Teddy Bear biscuits.), which is a moist chocolate cake, topped with white chocolate frosting, and a little chocolate Teddy Bear on top. Amazing. Sous-Jeff goes for his standard Carrot Cake (his favourite type of cake), which is your traditional carrot cake with cream cheese frosting. Since trying a pistachio macaron a few months ago an falling in love with the flavour, he also decides to try a Pistachio Heaven cupcake, which is a pistachio cake topped with sweet pistachio frosting – unfortunately, he wasn’t as impressed by this one. May be because he still had the dreamy taste of the carrot cake in his mouth.


Any how, no matter how many times I eat here, I’m still impressed. Go there now. You know you want to.

There’s not much more precious to me than an afternoon off work to spend at my leisure. Working in the health and wellness industry like I do basically means working early mornings, late nights and weekends – the times when everyone else has off work to go to the gym! So on this particular Tuesday morning, after starting work at 6:30am, I received a perfectly timed email not long before my 12pm finishing time from Agata of Amore Cucina, suggesting a catch up to discuss some of the cooking classes I’ll soon be teaching. And I was thrilled when she suggested Lilie’s.

Mum took me there for a ladies afternoon tea the day before my wedding last year, and we had the most amazingly fresh, delicious little cakes there. It’s a relaxed atmosphere, and although it’s tiny and the tables are close together, you almost feel like you’re in a little French cafe where no one can hear your conversation.

Lilie’s is a gorgeous little cafe, part of a homewares, clothing and lifestyle business, run by two sisters with a passion for France. Their beautiful wares include handmade pottery, simple clothing made from materials such as cheesecloth, linen and cotton, cook books, French provence inspired stationary. They even organise group tours and trips to France! Unfortunately they do not allow photographs of the inside of the cafe so I can’t show you what it looks like, but I was permitted to photograph the food, so you can see how yummy it is!

It is generally recommended that you make a booking here, as it is a very small space (especially in winter when the outside eating area is closed), and Lilie’s is almost always busy. They make beautiful fresh small meals, as well as gorgeous cakes and desserts, and that’s what Agata and I go for. We’re seated next to baskets full of gorgeous, freshly picked lemons, limes and grapefruits – which are all available for sale if you want to take some home with you.

It was beautifully presented with a dollop of cream, topped with very soft cream cheese, sunflower and pumpkin seeds, dried apricots and orange zest. The cake itself was magnificent, soft and fluffy, with just enough cream cheese in between the layers of cake.

Being the chocoholic I am, I can’t go past the chocolate pear tart. It’s calling my name and it would just be plain rude to ignore it.

What can I say? Wow. Just wow. It was filled with big, juicy, poached pears, nestled in amongst the gooey, fudgy chocolate, blanketed with a firm but delicate chocolate crust.



I finished every last chocolatey crumb on my plate as we discussed cooking, weight loss, fresh food, our Italian background. After lots of work shopping and chatting and getting very off topic more than once (hey, this is what happens when two Italian women get together!), here’s the list of classes I’ll be teaching soon…

All in all, a very productive afternoon tea date! I’m soooo excited to be getting my classes underway soon, and have been doing lots of cooking and baking at home, testing out some of the recipes that I haven’t made in a while (much to Sous-Jeff’s great excitement) to make sure I’m all ready to go in a few weeks! And I can’t wait to get back to Lillie’s again for another gorgeous cake soon :) By the way, after Agata and I had finished catching up and planning, and every last morsel of chocolate from my plate was devoured, I promptly took myself to the gym to attempt to atone for my chocolate sins. But when it’s that good, it’s worth it!
